Pistachio Chocolate Chip Cookies for St. Paddy's Day
My sweet hubby is on his way home from IKEA with my new sectional couch. {Its 2 1/2 hours away}. What's a girl to do but bake to make the time go by faster!
I'm not much of a decorator for different holidays {except Christmas} although I do like to change things out seasonally. If you follow pinterest much you may feel woe~fully inadequate that you don't deck out your mantle for St. Patrick's day or Easter, or make all of those cute theme-y crafts. I am with you there! {Though I don't feel inadequate about it, its just not my thing!} The one thing I will jump on board with however is baking things to fit the holidays.
Today I want to share with you the recipe for these yummy cookies:
These cookies are great because the list of ingredients is small, they are easy to do, and they aren't super-sweet.
Here's what you'll need:
Because the only sugar in these cookies is from the pudding mixes, I recommend not using sugar free. Don't skimp on the chocolate chips either because you need them to add some sweetness.
I cream my butter first before adding the pudding and eggs. Although this recipe says 12 minutes my oven took only 10 so keep an eye on them. You want them to look slightly browned but not overly so.
These are perfectly done!
Now you can feel festive even if you're not Irish!
